Rooms Hotel Kazbegi is looking for a suitable candidate for the position of Cost Controller.

Job Title: Cost Controller
Department: Financial Department


To ensure that all Food & Beverage cost control systems, within the hotel, as per Hotel Accounting systems are adhered to. To control all Food & Beverage movements in relation to receiving costings, requisitioning and ordering. To provide relevant statistical information for use by Food & Beverage Line Managers and the Accounts Department. To maintain policies and procedures in accordance with the Company requirements.

Knowledge, Skills and Abilities:

** Bachelors degree in the related field;
** Must have Computer skills: Windows XP, Word, Excel, MS Outlook;
** Must be good in English language. Any additional languages will be considered as a plus;
** Must have good knowledge of food and beverage items, consumable items;
** Must be knowledgeable in checking quality of goods and in working with supply schedules;
** Must be able to perform duties independently and with the team.

Main Responsibilities

** To produce daily/weekly flood flash report;
** To check and approve food&Beverage invoices;
** Operating cost prices;
** Recording of transfers of food&beverage between departments;
** Regular daily inspections of quality and state of items in food store rooms on a minimum of once per day;
** To monitor costs of all food&beverage results;
** Production of monthly food&beverage results;
** All items are to be received and stored in their correct manner according to storing location, packaging, temperature, light, humidity etc;
** To undertake cost forecasting exercises;
** Collation of beverage requisitions and input in to stock system;
** Update beverage cost prices;
** Monthly stocktaking;
** To bring to the attention of the Food & Beverage Manager, Chef and Conference & Banqueting Manager, reasons for variances in Food & Beverage GP`s. To have evidence available to support these identified areas;
** To check selling prices submitted by Food & Beverage Manager for drink/menus;
** To maintain an accurate cellar ledger;
** To ensure bin cards and cellar ledger balance and any discrepances are approved;
** To maintain pars of food&beverage and the cellar stocks;
** To control the administration of the operation of minibars in relation to late charges and write-offs.

General: Hotel`s Fire, Health and Safety Procedures.
